Breakfast for Dinner

Tonight, I was in the mood for eggs when I got home from work (woes of being a Saturday Librarian), so I made bacon-egg-sweet potato scramble. I made a second skillet with white potatoes for my husband, who is not a sweet potato fan (blasphemy!).

Ugly but delicious
 This is one of my favorite quick meals, just dice up a sweet potato and a few strips of bacon and fry them up together until the bacon is crisp and the potatoes are soft and have a little bit of char on them, then scramble in as many eggs as you want. Delicious!
